Yield:4 servings

Ingredients

  • 1 whole chicken (approximately 3 lbs)
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 2-3 sprigs fresh thyme leaves or 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1.5-2 lbs baby potatoes, halved
  • 125g (1 cup) dried breadcrumbs
  • 0.5 tsp garlic salt
  • 4 tbsp melted butter

Instructions

  1. Preheat the oven to 200C (400F).
  2. To spatchcock the chicken, place it breast side down. With a sharp knife or kitchen scissors, cut along one side of the backbone, then repeat on the other side. Remove the backbone and flip the chicken cut side down. Press down firmly on the chicken breast to flatten it. Tuck the wing tips under the breasts to prevent burning.
  3. Brush the chicken with olive oil and season generously with salt, pepper, garlic powder, and thyme leaves.
  4. Prepare the baby potatoes by cutting the larger ones in half for even cooking. Toss them in olive oil and salt, then scatter them around the chicken on the baking tray.
  5. Roast the chicken and potatoes in the oven for 40 minutes, or until the internal temperature reaches 165F (74C) in the thickest part of the chicken.
  6. Mix melted butter with breadcrumbs, then scatter the mixture over the chicken. Broil for 2-3 minutes, or until the breadcrumbs are golden brown. Keep a close eye on it to avoid burning.

This method not only ensures that the chicken cooks more quickly but also results in a juicier and more flavorful bird. Many home cooks have discovered that spatchcocking is the secret to achieving perfectly roasted chicken every time, making it a popular choice for both weeknight dinners and special occasions. By opting for a spatchcocked chicken, you re setting yourself up for success with minimal effort.

Perfecting Your Seasoning

When it comes to seasoning your spatchcock roast chicken, the right blend can make all the difference. A simple mixture of salt, pepper, garlic powder, and fresh thyme can enhance the natural flavors of the chicken, creating a dish that is both aromatic and delicious. Don t shy away from experimenting with spices; consider adding smoked paprika for a hint of smokiness or lemon zest for a refreshing twist. Additionally, marinating the chicken for a few hours or overnight can infuse it with even more flavor. Remember, the key to a succulent roast chicken is in the seasoning, so be generous and creative with your choices!

Serving Suggestions for Spatchcock Roast Chicken

While your delicious spatchcock roast chicken is the star of the meal, consider these serving suggestions to round out your dining experience. For a delightful contrast, add a tangy dipping sauce, such as chimichurri or a garlic aioli, to enhance the flavors even further. These accompaniments not only elevate your dish but also impress your guests.

Storage and Reheating Tips

Storing leftover spatchcock roast chicken is easy, and reheating it correctly can help maintain its delicious flavor and texture. Allow the chicken to cool before transferring it to an airtight container. It can be kept in the refrigerator for up to three days or frozen for up to three months.
